A post a day?
Feb. 13th, 2009 12:26 pmI've been neglecting LJ something fierce, and I feel bad about it. So I've decided to try to post at least one real (i.e., not a Twitter auto-ship) post per day. Friday the 13th seems as good a day to start as any. :)
So, for today's post, here's a probably not complete list of new recipes I have cooked since the beginning of the year.
* Corn muffins take one. Recipe from the side of the container of cornmeal. Very tasty, the kids loved them. But it's all refined sugar and white flour, alas.
* Corn muffins take two. Recipe from vegweb.com using maple syrup, whole-wheat flour, and apple cider vinegar plus milk (I think this was meant to stand in for buttermilk - though the actual recipe called for soymilk). I thought these were great but the kids didn't like them.
* Corn chowder from stonyfield.com, using yogurt and soft tofu as thickeners. This was a complete failure. The texture was weird and the tofu flavor overpowered the corn flavor. alas.
* Brown rice bread from the side of the box of brown rice. It didn't rise up terribly well, but still came out decently. I thought it was quite tasty and the rice in the crust gave an interesting chew. The kids didn't like it at all though. And after a day or two it got so crumbly, it was impossible to make sandwiches with and almost too crumbly even to toast and spread butter on.
That may be all, I guess. Nothing else comes to mind at the moment. I've been jonesing to make cookies or brownies, but holding off especially since our Girl Scout Cookies came in. It's funny - Ruthie generally doesn't really care for sweet baked goods (cookies, cake, etc.) -- she'll get all excited when they are mentioned, but then she just takes a bite or two and is done. But with the Girl Scout cookies, specifically the "Thanks-a-lot" ones which are sort of shortbready with a chocolate coating, it's a whole other story. She LOVES those things. She won't even condescend to try a Thin Mint because the Thanks-A-Lots are all she can think about. lol.
