oops, after my last update, realized that I never posted about the "breakfast tofu" that I made a week or so ago. So I'll call it #9 even though it was really like 6 or something. lol.

Anyway, it was "Vanilla-scented tofu oatmeal" from vegweb.com. Marinate some mashed-up tofu in vanilla extract overnight. Mix with oatmeal and water, cook until thickened. I added some maple syrup and a little salt. It was pretty good, a little weird. I think I would have preferred a higher ratio of oatmeal to tofu. Or maybe the tofu needed more mashing. Not sure. Pretty good though for a high-protein, get-you-going kind of breakfast.

when I feel that outmeal needs more protein, I add nuts. Pecan s usually... also adds fat, which, to me, means that it'll actually get me to lunch, as carbs just go through me... tofu in oatmeal just sounds wrong.

yeah, I thought it sounded wrong too, but I gave it a try. It was actually pretty good but the texture was weird. I could probably get used to it.

also, tofu does have a fair amount of fat, not as much as nuts of course, but a pretty good dose.
