Some of you on my flist have in the past done this "100 recipes" project where you try to cook 100 new-to-you recipes in a year. I'm not going to set any such ambitious goal, so I'll just call it a "recipe count" project and keep track of how many new recipes/dishes I make. So #1 for 2008 was the oatmeal cookies from the other day.

#2 was last night, the curry mashed potatoes from High Flavor, Low Fat Vegetarian Cooking. These were AWESOME! And really easy to make -- I was really sorry that I decided to make a half-recipe. ;) I could, and might, make them again tonight.

I don't have the cookbook in front of me, but basically it goes: chop some onion and garlic, saute them in a little oil with some curry powder. Meanwhile, boil potatoes in water until very soft. Mash the potatoes, then mix in the curried onion and some sour cream, salt, pepper. (It also called for a pinch of cayenne pepper but it turns out I don't have any. oops.) It said to add a little milk or vegetable stock if the potatoes were too dry. So mine were probably not as low-fat as they could have been, because I used regular sour cream (what I had) instead of fat-free sour cream, and 2% milk instead of skim. Still, it was a tiny amount of both, so they were probably still quite low-fat. And did I mention delicious??

I am sure this recipe could be used in something, like wrapped in some kind of wrapper to make a mock-samosa, or something like that. But it was great just by itself as well. Of course, neither kid would even taste it, alas.

Edit: I meant to add that even just a year ago, the idea that I could look at a recipe whose ingredients went "potatoes, curry powder, onion, garlic, sour cream" and say "I have all the stuff on hand to make that today" without doing a special shopping trip, would have been really hard to imagine. :)
