sweet potato bread recipe
Jan. 18th, 2006 04:35 pmBy popular (well, okay, one person) request, here's the recipe for Sweet Potato Bread, which my mom got from the Boston Globe, I believe. It's actually called Sweet Potato and Pecan Bread, but we never put in the pecans, just because it's too much trouble. And we usually double the recipe otherwise it's gone too fast. :)
Sweet Potato and Pecan Bread
1 cup mashed, cooked sweet potato (we usually bake them, but you could
also boil)
3/4 cup granulated sugar
1/2 cup brown sugar
2 eggs
1/2 cup vegetable oil
1/4 cup orange juice
1-3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup pecans, toasted - if desired
Set the oven at 350 degrees. Have on hand a 9-by-5 inch loaf pan.
Grease it and dust it with flour, tapping out the excess.
In the bowl of an electric mixer, beat the sweet potato just to
lighten it. Add the granulated and brown sugars, eggs, oil, and
orange juice. Beat for 1 minute.
Stir in the flour, baking powder, baking soda, salt, cinnamon,
allspice and cloves. Remove the beaters and use a rubber spatula to
stir in the pecans (optional).
Transfer the batter to the prepared pan. Bake the bread in the hot
oven for 60 to 70 minutes or until a skewer inserted into the center
comes out clean. Remove the bread from the oven and set it aside to
cool for 30 minutes. Turn the loaf out onto a rack to cool
completely. Slice thickly for serving.

Took it to a party because I didn't want to snarf it all myself. It was easily the best thing there. Way better than all the grease-paste bakery confections other people brought.
